Corn Bread Cake

This is one of those recipes that I had at a party and absolutely loved it so I asked for the recipe. It had a lot of butter and oil which made it really delicious but really fattening. So I took the recipe and made it delicious and light. It came out awesome and you woudl never know I changed up the recipe. You are really going to enjoy this so give it a try!

Preheat oven 350o

Serves: 10

Ingredients:

½ cup cornmeal

1 ½ cups flour

¾ cup sugar

1 Tablespoon baking powder

½ teaspoon salt

1 package sugar free vanilla flavored instant pudding mix

1/3 cup butter spread, melted

2 Tablespoons honey

½ cup egg substitute

1 ¼ cup buttermilk

Directions:

  1. Spray 8X8 baking dish with cooking spray and set aside.
  2. Stir together the cornmeal, flour, sugar, baking powder, salt and pudding mix.
  3. Pour in the butter spread, honey, egg substitute and buttermilk and stir until moist.
  4. Pour the batter into the baking dish and bake for about 45 minutes or until the top of the cornbread starts to brown and show cracks.

Apple-Raisin Bread


Serves: 8

Preheat Oven 400o

Ingredients:

1 ½ cup flour

1 teaspoon cinnamon

½ teaspoon nutmeg

½ teaspoon allspice

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1/3 cup brown sugar

¼ cup egg substitute

¾ cup buttermilk

2 Tablespoons low calorie/fat butter spread

2 Tablespoons unsweetened apple sauce

½ cup raisins

1 large apple – cored, peeled and chopped

Directions:

  1. Spray loaf pan with cooking spray.
  2. In a large bowl, sift together flour, cinnamon, nutmeg, allspice, baking powder, baking soda and salt.  Stir in brown sugar.
  3. In a mixing bowl, mix buttermilk, egg substitute, apple sauce and butter spread.
  4. Fold dry ingredients into buttermilk mixture, then mix in chopped apples and raisins.
  5. Bake 45 – 50 minutes until browned and a toothpick comes out clean when inserting.
  6. Let bread cool for 5 minutes, then remove from loaf pan and serve warm.

Pumpkin Bread

Here’s is a recipe that I have been baking for over 10 years and it has never failed me.  It’s always sweet, moist and delicious.

You can choose to make it with or without the cream cheese frosting.  Here are both options.

Serves 16

Preheat oven to 350o

Prep Time: 10 minutes

Cook Time 50 – 60 minutes

Cake Ingredients:

3       cups flour

1/2 cup Stevia for cooking

1       cup sugar

½      cup raisins

2       teaspoons baking soda

½      teaspoon salt

1       teaspoon ground cinnamon

½      teaspoon cloves

½      teaspoon baking powder

1       Tablespoons low calorie/low fat butter spread, melted

1       cup egg substitute

1/3 cup unsweetened apple sauce

1       can (15 oz.) pumpkin puree

Directions for Cake:

  1. Grease the bottoms only of 2 loaf pans.
  2. Beat all ingredients in a large bowl on low speed, scraping bowl, for 30 seconds.
  3. Beat on medium speed for 45 seconds more.
  4. Pour into pans and bake for 50-60 minutes.
  5. Cool 10 minutes.  Loosen sides and remove pans.

1       cup egg substitute

1       jar (4 ounces) baby carrot puree

1       can (15 oz.) pumpkin puree

Directions for Cake:

  1. Grease the bottoms only of 2 loaf pans.
  2. Beat all ingredients in a large bowl on low speed, scraping bowl, for 30 seconds.
  3. Beat on medium speed for 45 seconds more.
  4. Pour into pans and bake for 50-60 minutes.
  5. Cool 10 minutes.  Loosen sides and remove pans.

Frosting Ingredients:

½      cup powdered sugar

1       Tablespoon grated lemon peel

1       (8-ounce block) low fat cream cheese – softened

Directions for frosting:

  1. While bread is baking, prepare frosting.
  2. Place powder sugar lemon rind and cream cheese in a bowl; beat in a mixer at medium speed until smooth.
  3. Cool completely before spreading cream cheese frosting.

Banana Bread


Preheat Oven 350o

Serves: 8

Ingredients:

1 ½ cups flour

¾ cups brown sugar

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

¼ teaspoon ground cloves

1/3 cup unsweetened apple sauce

1 Tablespoon low fat/low calorie butter spread, melted

½ cup egg substitute

3 overripe bananas, mashed

Directions:

  1. Spray a loaf pan with cooking spray.
  2. Mix together flour, sugar, baking soda, baking powder, salt, cinnamon and cloves.
  3. With an electric mixer on medium speed, mix together apple sauce, melted butter spread, egg substitute and mashed bananas.
  4. Add dry ingredients and mix on slow speed until all ingredients are incorporated.
  5. Pour batter into pan and bake for 50-60 minutes.
  6. Cool at least 10 minutes
  7. Loosen sides and remove pans.

Good Company and Coffee…


Having a friend over or company for the weekend?  This is a great snack or morning sweet treat for either.  It’s easy to bake, makes the house smell welcoming and goes great with a cup of coffee or tea.

Applesauce Streusel Cake

 Prep time: 15 minutes

Cook time: 30 – 35 minutes

Serves 9

 Preheat oven 375o

 Cake Ingredients:

1 cup flour

1 ½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 teaspoon cinnamon

½ cup egg substitute

1 cup unsweetened applesauce

½ cup sugar

1 teaspoon vanilla extract

 Directions:

  1. In a medium mixing bowl, combine flour, baking powder, baking soda, salt and cinnamon and whisk together.  Add egg substitute, applesauce, sugar and vanilla extract and stir until well combined.
  2. Spray a 9’X9” baking pan and pour batter into pan.  Prepare crumb topping (recipe below).

 Streusel Topping Ingredients:

1 ½ cups flour

½ cup light brown sugar

cinnamon

6 tablespoons low calorie butter spread – melted

 Directions:

  1. Combine all ingredients with fork. 
  2. Sprinkle streusel topping on top of cake and bake for 30 – 35 minutes.

Irish Soda Bread


I am sorry that I am late with these recipes.  I baked 4 soda breads to see what would work.  I started last night but didn’t get it until later this afternoon.  Anyway, if you like these, you can use them for next year.  You can also shape them into individual sized servings and serve them on a weekend as sweet biscuits any time of the year.

We had company tonight for dinner and I asked everyone to take a taste test.  It seems that the recipe with the sour cream was more favored.  However, they liked the whole wheat ones as well, so both might be worth trying.

Irish Soda Bread

Serves 12

Prep time: 10 minutes

Bake time: 45 minutes

Preheat oven 375o

Ingredients:

3 cups flour

3 teaspoons baking powder

½ teaspoon salt

¾ teaspoons baking soda

½ cup sugar

1 cup raisins

2 cups fat free sour cream

2 tablespoons reduced calorie butter spread – melted

¼ cup egg substitute

Directions:

  1. In a large mixing bowl, sift together flour, baking powder, salt and baking soda.  Stir in sugar.
  2. Add raisins and stir.
  3. Add sour cream and mix well.  Add butter spread and egg substitute and mix.
  4. Turn onto a floured board.
  5. Spray baking sheet with cooking spray.
  6. Shape dough into an 8-inch round and place on baking sheet.
  7. Bake for 45 minutes.

Calories = 152                                              Fat = 1.43

Irish Soda Bread

Bake time: 45 minutes

Preheat oven 350o

Ingredients:

2 cups white flour

1 cup whole wheat flour

2 teaspoons baking soda

1 teaspoon salt

1 cup sugar

½ cup raisins

2 teaspoons caraway seeds (optional)

1 ½ cups low fat buttermilk

¼ cup low calorie butter spread

Directions:

  1. In a large mixing bowl, sift together both flours, baking soda and salt.  Stir in sugar.
  2. Stir in raisins and caraway seeds (if using).
  3. Stir in buttermilk and butter spread.
  4. Spray a cake pan with cooking spray and spoon batter into cake pan.
  5. Bake for 45 minutes.
